Quetzal Rich Red is a fortied wine crafted from Alicante Bouschet grapes, handpicked at optimal ripeness in Vinha das Pedras. The grapes are transported to the winery in small crates and immediately cooled to 10°C upon arrival to maintain their quality. The winemaking process includes destemming and foot-treading for three days to extract deep, rich avours. Fermentation occurs in a controlled environment at 24°C in a small tank and stopped with 77% alc/vol grape spirit. The wine is then aged for 16 months in new French oak barrels, enhancing its complexity and depth.
Best served chilled, Quetzal Rich Red offers a full-bodied prole with vibrant avours of ripe dark berries and subtle spice notes, culminating in a smooth, velvety nish. It pairs beautifully with a wide range of desserts, including decadent chocolate fondant and rich tiramisu. Its robust character also complements sticky toffee pudding and pecan pie, as well as cured or blue cheeses, providing a luxurious and sophisticated tasting experience.
